Gluten free apple pie muffins

Apple Pie Muffins

Ingredients

Dry:
1/2 cup coconut flour
1/4 cup tapioca starch (or other gluten free flour of choice)
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg

Wet:
3 eggs
5 tbsp coconut oil, melted 2/3 cup full-fat coconut milk 1/2 tsp vanilla extract
5 tbsp honey, raw

Other: 2 medium Granny Smith apples, peeled. Dice one apple and slice the other.

Method

Heat oven to 180° and line a 12 muffin tray, set aside.
Dice 1 apple, melt coconut oil, and gather ingredients.
Add dry ingredients to large mixing bowl, set aside.
Whisk eggs, add coconut milk, coconut oil, vanilla extract, and ½ the diced apple.
Add wet ingredients to dry, mix well.
Add honey and ½ the diced apple (you now have used the 1 whole apple), mix well.
Pour batter evenly in muffin compartments.
Top batter with sliced apple and a dash of cinnamon.
Bake for 15-20 minutes or until golden brown.
Enjoy warm or pop into lunch box if any are left.
