Oat and Strawberry Bars

These healthy bars are delightful sweets for a snack or healthy dessert.
Feel free to add in flaked almonds, chopped nuts and seeds, shredded coconut, or a drizzle of melted dairy-free dark chocolate for variation!

Ingredients:

  • 2 1/2 cups wholemeal flour
  • 2 cups rolled oats
  • 3 tablespoons of maple syrup
  • 2 t. baking powder
  • 1/2 t. salt
  • 1 1/2 cups plain soy milk, almond milk or rice milk
  • 3 cups no-sugar added strawberry preserve, puree, or fresh berries sliced

Method:

1. Preheat the oven to 180oC. Lightly oil a lamington tray and set aside.

2. In a large mixing bowl, combine the flour, oats, baking powder and salt. Whisk the maple syrup with milk and then add to dry ingredients, mixing until just combined. Spread half of the oats mixture into the bottom of the prepared dish. Spread the strawberry preserves on top of the crust (this is easier if preserve is warm). Using your hands, place several tablespoons of the soft dough (it should be the consistency of a very thick batter) on top of the preserves until all of the dough has been used.

3. Bake for about 30=35 minutes, or until golden brown. Serve warm, at room temperature, or cold.
