Rice puff bars

Ingredients:

4 cups puffed rice (available in bulk food stores)
1 cup of nut butter (there are loads of varieties – I used 1/2 cup of almond and 1/2 cup of sunflower seed butter)
1/2 cup your choice of liquid sweetener – honey, rice malt syrup, concentrated apple syrup
1 tbsp vanilla extract
3 tbsp coconut oil

Optional: 2 tbsp each of Goji berries and choc chips or cacao nibs

Method:

Place coconut oil, nut butter and sweetener in a small pan; melt until you can combine them.
Place rice puffs in a bowl. Pour over the runny nut butter mix and combine with a wooden spoon until it covers all the rice.
Place in a lined baking dish and pat down with the back of a spoon.
If using optional extras now is when you press them into the top
Place in the fridge to set for 20 mins.
Remove and slice.

Variations : add cacao powder to make chocolate flavour, dried fruit chopped through, drizzle top with melted chocolate. Add some seeds like sunflower or sesame – even chia. Why not give them a try.
