Vegetarian Sausage Rolls

Vegetarian sausage rolls

Ingredients:

1 onion, finely diced
1 carrot, grated
1 zucchini, grated
1 egg, beaten
2 tablespoons of tomato paste
1 can brown lentils (400g) or pre-soaked and boiled
1 teaspoon of dried herbs or 1 tablespoon of fresh
can be Italian herb mix, parsley, oregano, thyme or whatever you have at hand
optional : cheese – ½ cup cottage or grated tasty
2 sheets of puff pastry

Method:

Simply mix vegetables together with lentils, egg, paste and herbs and cheese if using
Line baking tray with baking paper and preheat oven to 180 oC
Cut pastry sheets in half length wise
Place vegetable mix along the edge of puff pastry
Roll up and seal edges with some milk
Lightly brush with milk and sprinkle with seeds
Place ‘logs’ in oven and bake for 45 minutes
Slice into portions and serve with crunchy green salad

This was a last minute rush dinner that was quite a successful way of using a few ingredients look and taste yummy – in fact the teenage boys (TB’s) hid some in fridge for lunch the next day.
